Sweetcorn Pancakes & Tomato Salsa
Sometimes you just need a little change from the usual pancakes. This is where these savoury Mexican inspired pancakes come into their own. Served with the salsa and a nice home made guacamole you can't really go wrong. Best of all you can pack in 2 or 3 portions of veg and kids love them too.
Ingredients
- 1/2 cup of self raising flour
- 1/4 tsp baking powder
- 1/2 cup of milk
- 1 egg
- 2 tbsp of sweetcorn
- Pinch of chilli powder
- 1 large tomato
- For the salsa
- 1/2 spring onion
- 1/4 red chilli
- 1/2 tsp sugar
- Handful of coriander
- Juice from a wedge of lime
- Pinch of salt
Method
- Mix all the pancake ingredients together and set aside whilst you make the salsa.
- To make the salsa chop the tomato, spring onion, red chilli and coriander.
- Place in a bowl and add the rest of the ingredients.
- Stir and leave to serve with the pancakes.
- Heat a little oil in a frying pan over a medium heat.

Tasty alternatives
Use courgette instead of corn
Add some lemon juice instead of lime juice.
Add some red onions instead of spring onion.
Add some cumin to taste.
Add a little garlic.
