Grapefruit, Almond & Olive Oil Cake

A cake so full of goodness you could even eat it for breakfast! Thanks to the high protein content this cake would make a nourishing way to start the day. Eat with a dollop of live yoghurt and a side of berry compote. I used grapefruit but any citrus fruit would work. Thanks to the olive oil and ground almonds it's both gluten and dairy free.

Ingredients

  • 165g ground almonds
  • 75g gluten free self raising flour
  • 90g golden caster sugar
  • 125 ml light olive oil
  • 3 large eggs
  • 1 tsp baking powder
  • Zest and juice of a pink grapefruit
  • 2 tbsp flaked almonds

Method

  1. In a large bowl mix together the olive oil, eggs and sugar.
  2. Add the ground almonds, gluten free flour and baking powder and mix to combine.
  3. Add the zest and juice from the grapefruit, then pour the cake batter into a lined loaf tin.
  4. Sprinkle with the flaked almonds and bake in a pre-heated oven 170 for 35 minutes or until a skewer comes out clean.
  5. Allow to cool and serve with a dollop of coconut yoghurt and some berries or berry compote.

Tasty alternatives

Use lemon, or orange instead

Add a tablespoon of poppy seeds

Add a syrup of orange juice, maple syrup and cointreau for a special occasion cake.
